It is made today as it was nine centuries ago: the same ingredients (milk, salt, rennet), the same care and passion, the same area of origin. The bond between Parmigiano-Reggiano and its area of origin is essential; the production of milk and transformation into cheese takes place in the territory making up the province of Emilia and that of lower Lombardy. In fact, here there are more than 4,000 farms which produce high quality milk and more than 400 cheese makers that each day make cheese and mature it for a minimum of 12 months up to 2 years and more, checking each cheese, day after day.
